In 2000, he joined the law firm Pryor Cashman, marking the beginning of his involvement in high-profile real estate ventures, including Time Warner Center in Columbus Circle.


At Time Warner Center, Rubenstein played a pivotal role in negotiating leases for every retail store and restaurant, showcasing his proficiency in navigating complex deal structures. His exposure to the curated food and beverage element within Time Warner Center opened doors to the hospitality industry, where he later represented restaurant and hotel developers in negotiations with food and beverage establishments.


Over time, Rubenstein's reputation in New York City as a go-to attorney for hospitality-related real estate matters solidified. His involvement in negotiating joint venture documents and leases for renowned celebrity chef establishments marked a significant aspect of his career.
